We produce wonderful raw milk that is carefully crafted into this bandaged cheddar. Each wheel is labeled with the lot number, date, and the pasture the cows grazed in. Our cheese is sold online by our partner Fromagination.

Handcrafted Cheese from Our Farm

Farming for Four Generations
St. Isidore’s Dairy was founded in 2006 by farmer and cheese maker Inga Witscher-Orth. A fourth-generation dairy farmer, Inga fell in love with cows on her family’s farm near Seattle.

Farming as Nature Intended
During the grazing season, our cows are moved twice a day to fresh pasture, where they graze on native Wisconsin grasses, clovers, and wildflowers. This natural approach supports healthy cows and provides essential habitat for grassland birds and pollinators. In winter, the cows enjoy dry hay baled from our own fields.

Farmstead Milking
Our girls are milked twice a day using a traditional bucket milking system. This gentle process helps maintain the integrity of the milk, which is then hand-poured into our bulk tank to be cooled and stored until it’s ready to be transformed into cheese. Each truckle reflects the season, the pasture, and the care behind it.
